bourbon chicken

I was about to type up the recipe and then thought to do a google search.  Sure enough, I found the one I’ve been using!  I’ll link it and spare myself the typing.

Bourbon Chicken

I make the recipe as is, except at the end when it comes time to simmer for 20 minutes, I let it simmer for 10 and then toss in a bag of frozen stir-fry veggies and cover it for another 10-12 minutes (until the veggies are heated through).  And right before serving, I add equal parts cornstarch and water (usually a tablespoon of each, just mixed together in a measuring cup and dumped in) to thicken the sauce just a tad.

So good, and easy!

those swedish meatballs?

Goooooood.

I definitely recommend them.  Easy, quick and inexpensive too.

I made very little change to the recipe.  I skimmed over the “other takes” listed at the bottom and did the following:  as I was heating up the meatballs in the skillet, I poured in enough white wine to cover the bottom of the pan.  Then after the meatballs were heated through and I’d added the gravy and sour cream, I added a pinch of dill, a hefty pinch of kosher salt and a hefty pinch of coarsely ground black pepper.  Served with “smashed” potatoes and steamed sugar snap peas on the side.

Definitely having these again!

Rough week last week, I ended up skipping meal planning and just threw stuff together at the last minute most days.

This week I’m back on track!  I have to say, I really love doing this - not because I’m sure you all find it so terribly interesting, but for me because it keeps me on track.  I normally h-a-t-e putting a weekly menu together and making my shopping list.  It’s nice to have a reason to get it done (besides the obvious “so we have food” reason of course).

marinated vegetable salad

We’ve had a change in plans with the menu this week.  My mom-in-law has decided to swing in and stay a few days with us this weekend, so I have to rethink our meals.  She’s offered to babysit for us one night so we can go out, so I’m going to have sandwich fixins and this marinated vegetable salad for her and the kids. 

My Grandma in Indiana has been making this for as long as I can remember, it’s one of my all-time favorites.

1 cup sugar
3/4 cup cider vinegar
1/2 cup vegetable oil
1 teaspoon pepper
1/2 teaspoon salt

Mix, bring to a boil and then cool.

Mix oil and vinegar mixture in a large bowl with:

1 (16 oz) can French-style green beans (drained)
1 (17 oz) can sweet English peas (drained)
2 (14 oz) cans Shoepeg corn (drained)
1 diced red bell pepper
1 diced green bell pepper
1 cup chopped celery
1 bunch green onion, chopped

Stir and chill for at least 8 hours.

I’ve NEVER been able to wait 8 hours.  I always have at least a small bowl within the first half hour because I just can’t wait.  It practically feeds an army, so if you’re making it for a smallish family like me, be prepared to eat it for a few days.  Good thing it keeps for several days in the fridge!

Also, her original recipe called for an 8 oz jar of pimentos, drained.  I decided on the fresh red pepper instead at her suggestion, but you could use what you like best.

cheesy vegetable casserole

Okay, nothing fancy, but it’s easy and it gets kids to eat their veggies!

1 16 oz pkg frozen mixed vegetables - I make sure it’s heavy on the broccoli since Jason and Jag both love it
1/2 lb Velveeta cheese, cubed - I sometimes use a little more
1 roll Ritz crackers, crushed
1 stick of melted butter

Cook the vegetables according to the package directions.  Drain and put into a 9 x 13 baking dish.

Evenly place cubes of Velveeta on top of the veggies.

Mix Ritz crackers and butter, then sprinkle on top of veggies and cheese.

Bake at 350 degrees until cheese is melted and just starting to turn brown.

I like to make this for pot lucks and it’s always a hit.  Literally, the pan is scraped clean!  LOL

Welp, 3/4 of us were sick last week, so there were a few nights we didn’t make dinner - we just sort of scavenged or ate pb&j.  So there are some meals we didn’t get to that I’m going to move on over to this week’s menu, and then just add a few new ones onto the end.

Monday:  chicken lo mein (recipe linked in last week’s entry)  We need to eat this asap before the bell peppers go bad.

Tuesday:  breakfast for dinner

Wednesday:  chili

Thursday:  monterey chicken

Friday:  swedish meatballs (this recipe) - served with mashed potatoes and steamed veggies

Saturday:  homemade chicken nuggets, served with french fries (or tator tots, it’s up to the kids) and a cheesy vegetable casserole (recipe here.  It’s so yummy and easy, I can make it in advance and just bake it off while Jason does the nuggets)

Sunday:  grilled chicken over salad greens.  I know we just had this week before last, but it was so good, I’ve been dying to have it again and plus it’s just so easy.  I’m all about easy!

Bonus meal:  hamburgers on the grill.  We’ve got extra patties in the freezer and lots of extra “instant” sides (organic mac & cheese, baked beans, frozen veggies, etc) so it’ll be our standby meal.  Which, btw, might seem weird to plan for, but last week one of our meals didn’t work out because the meat went bad 2 days earlier than it should have (grrrr) so if we hadn’t been sick and had eaten all the rest of our meals, we would have been short and probably would have ended up eating out.  Not that I don’t love to go out to eat, but in the spirit of saving money and trying not to eat an entire week’s worth of calories in one meal, I like to have something extra on hand just incase.

Two weeks in a row!  I’m on a roll!  ;-P

Monday:  monterey chicken, thanks to Carol for the suggestion a couple of weeks ago.  We tried it once already and loved it, can’t wait to have it again!  Mashed potatoes and sugar snap peas on the side.

Tuesdaybalsamic-honey pork chops.  One of my all-time faves.  Served with mixed rice and green beans.

Wednesday:  breakfast for dinner!  Jason makes pancakes from scratch (inspired by Alton Brown) with bacon and/or sausage on the side.

Thursday:  beef fajitas.  top sirloin steak, seasonings, peppers, onions and all the fixin’s on the side.

Friday:  chicken lo mein.  This recipe.  New recipe for us.

Saturday:  spaghetti and meatballs.  Easy meal - noodles, sauce, meatballs and some bread on the side.  Salad, too.

Sunday:  hamburgers on the grill.  Never got to these last week and we need to eat up the buns before the go bad!  Baked beans on the side, or maybe a pasta salad if I get around to making one.

Bonus meal:  homemade chicken nuggets.  I bought an extra pack of the chicken tenders at the store last week, so if we need them, they’re there.  If not, they’ll be on the official menu next week.  Mmmmm.

meal plan monday - MLK Day edition

Haven’t done this in a long time.  I have a million excuses, I won’t bore you.  I’ll keep it short and sweet.

Monday:  Beef stew.  I use this recipe, it’s simple and delicious.  I sometimes change it up and use some red wine, or throw in mushrooms if we have them.  But even without additions or changes, the basic recipe is perfectly fantastic.

Tuesday:  Asian skewers.  This recipe.  We can’t get enough of this meal.  Love it!

Wednesday:  Homemade chicken tenders.  Jason makes them, he’s got a certain recipe he uses (one he came up with himself and won’t write down for me) for the breading that, I swear, makes them better than any I’ve ever had in a restaurant.  I always look forward to these.  Sometimes we have them with Frank’s hot wing sauce, sometimes we have them plain with dipping sauces.  He always makes little popcorn sized pieces for the kids and they scarf them down!

Thursday:  Baked ziti.  Simple - sauce, noodles, cheese.  And garlic bread on the side.  This is one of my easy, toss-together meals for the week.

Friday:  Grilled chicken over salad greens.  Normally we do a caesar salad w/ grilled chicken, but I’ve taken to a more cobb style myself.  Mmmmmm!  This is a pretty easy, toss-together meal as well.

Saturday:  Chili.  Another simple meal.  Ground beef, store bought seasoning, tomatoes, chili beans, maybe a splash or two of beer if we want to get fancy.  ;-P  (I also like to throw in any other veggies we might have leftover from other meals - peppers, onions, maybe a little corn or something)  Jason likes saltines with his chili, and I have never cared either way, so saltines it is!

Sunday:  Chicken pot pie.  This recipe.  This is our new recipe of the week - we haven’t tried it before.  It looks good, and easy, so I’ve got high hopes.

Bonus meal:  Hamburgers and hotdogs on the grill.  With baked beans and steamed veggies on the side.
